FRUIT MANIA: AN EXOTIC WAY TO USE MANGOES IN A SALAD

As the summer sets in and the mercury rises, there is nothing more wonderful than eating a ripe juicy delicious mango. We have all eaten mangoes, have made mango milkshake and aam panna, used it as a dessert and had it along with vanilla ice-cream. Why not try to do something different and make an Exotic mango salad this season? It will tickle your taste buds and makes for a wonderful side dish or a main meal depending on your mood.
It's really simple to toss this together and all you need is:
2-3 unripe mangoes cut finely lengthwise (not raw and not overly ripe, they should be greenish yellow and firm)
1 cup of toasted coconut (grate Copra or a raw coconut and toast in a pan without oil for two minutes till it smells divine and is a light brown color)
3-4 finely chopped spring onions
1/2 red capsicum chopped finely for color
1 cup of basil torn
1 cup of finely chopped coriander
1 cup of bean sprouts
100 gms of fried tofu or chicken (optional)

For Decoration:
Torn lettuce for decorating the bowl
1/2 cup of toasted coconut and 10-12 roasted cashews for decoration

For the Dressing:
4 Tbsp Soya Sauce
2 Tbsp Brown Sugar
1/4 cup of lemon juice
1/2 tsp chilli flakes
(mix all the ingredients for the dressing and taste it. The dressing should be slightly on the sweeter side)

Put all the ingredients in a bowl, add the dressing and lightly toss it. Taste it and adjust the sweetness or tartness as per your taste. Decorate in a plate or a salad bowl. Scoop the salad on a bed of lettuce leaves and garnish with toasted coconut and broken cashews. Enjoy !!
